This Greek restaurant will bring Aegean sunlight into the first-ever 25Hours Hotel in the Middle East.
25hours is a smart, culturally resonant hotel company characterized by provocative urban locations, irreverent yet functional aesthetic, and the romantic nostalgia of grand hotels. Every property starts with a story, evoking the ethos of its building and celebrated neighborhood. Then, a team of architects, designers, and local heroes make use of analog reminders, bespoke furnishings, customized art, vintage finds, and curated music to create spaces full of personality, character and soul.
The company, which formed a strategic alliance with AccorHotels in 2016, contracted Anthologist founder Andria Mitsakos to conceptualize and bring to life its first Greek restaurant.
Honoring Anthologist’s commitment to authenticity and positive-impact design, we created a Greek island feel from top to toe. In concert with Woods Bagot, we envisioned the entire space, then filled it with meaningful items. Anthologist took care with every detail, from dictating the finishes and FF&E to engaging local Greek artists to design the restaurant logo, and calling on Greek ceramicists and textile designers to help us create what we like to think of as Greece’s easternmost island.
Scope of Work
- Create gastronomic concept including: ideation, branding, guest journey, service approach, menu direction, value proposition, pricing strategy, and design.
- FF&E direction

- Staff uniform direction
- Music/entertainment direction
- Create the folklore and feel of a Cycladic island; over 75% of the interior will be adorned with individually-sourced antique and vintage objects, along with bespoke furnishings created in Athens, Greece.
